Keto mozzarella sticks solve the problem that makes most low-carb versions disappointing: the breading doesn’t stick and falls off in the oil, leaving you with fried cheese pooling into the pan. The fix is freezing the breaded sticks for at least an hour before frying. Frozen cheese doesn’t melt out of its coating the moment it hits hot oil; it has time to develop a crust before the interior softens. The result is a cheese stick with an actual crisp exterior and a molten, pulled-apart center.

The breading
Quarter cup of almond flour, an eighth cup of grated parmesan, a tablespoon of coconut flour, and half a teaspoon of garlic salt, mixed together. The combination of almond flour and coconut flour is more effective than either alone: almond flour provides most of the bulk and fries up golden, while coconut flour is more absorbent and helps the coating stick to the wet egg surface. Parmesan adds a salty, savory note and helps the crust brown. Garlic salt is a simple seasoning choice that works well with mozzarella.
One egg whisked with a tablespoon of water in a separate bowl. Dip each string cheese half into the egg to coat, let the excess drip off briefly, then press into the almond flour mixture, turning and pressing until every surface is coated. Get the coating fully on because any exposed wet egg surface will cause the cheese to stick to the pan.
The freeze: mandatory, not optional
Once breaded, place all twelve pieces on a parchment-lined baking sheet and freeze for a minimum of one hour. This is the step that determines whether the recipe works. Mozzarella is a soft, high-moisture cheese that melts very fast in hot oil. Without freezing, the cheese melts through the coating before the exterior has time to set, and you get a pan of hot cheese with breading floating in the oil.
Freezing drops the center temperature to the point where the cheese has to absorb significant heat before it starts to melt. By the time that heat transfer happens, the coating has already set and formed a crust. The crust holds the shape and the cheese melts inside it rather than escaping through it.
For storage, the breaded and frozen sticks can go directly into a freezer bag and kept for up to three months. Fry directly from frozen whenever you want them; no thawing needed.
Frying
One to two inches of neutral oil in a deep skillet, heated to 350 degrees Fahrenheit over medium heat. A thermometer is helpful here; too cool and the coating absorbs oil and goes greasy, too hot and the exterior burns before the center is hot. 350 is the target. Add the frozen cheese sticks carefully, a few at a time, without crowding. Crowding drops the oil temperature and causes uneven frying.
One to two minutes per side until golden brown. The window is short because the coating is thin and the cheese is already partially frozen rather than room temperature. Watch them rather than timing them exactly. Golden brown on the outside, not dark brown. Drain on a paper towel-lined plate immediately after frying.
Serving
Marinara or ranch for dipping, served immediately. These do not hold well after frying; the crust softens quickly as the cheese inside continues releasing moisture. Make the dipping sauce before the oil goes on the stove so everything is ready at the same moment the cheese sticks come out of the pan.
String cheese is the specific ingredient here rather than fresh mozzarella cut into sticks. String cheese is drier, lower moisture, and holds its shape significantly better under heat. Fresh mozzarella has too much moisture and melts out more aggressively even with the freeze step. Stick with string cheese.
Keto breading and why this version works
The two most common failures in keto-adapted fried foods are coatings that don’t adhere and coatings that absorb too much oil. The almond flour and coconut flour combination here is drier than pure almond flour and forms a thinner, crisper crust that absorbs less oil during the short fry time. The parmesan adds protein that helps the crust set quickly. And the freeze step addresses the structural problem that all low-carb mozzarella stick recipes face. If you want to bake instead of fry

Do not bake from room temperature.
